Baked by Melissa recently launched its first-ever vegan cupcake collection in response to consumer demand. As vegan baking requires staple ingredients like milk and eggs to be avoided, this collection shares innovative new recipes for cake, icing, stuffing and toppings that explore different ingredient combinations than the brand is accustomed to working with.

In all, there are six decadent vegan cupcakes to enjoy, including varieties like Cookie Dough, Triple Chocolate Chip, Chocolate Vanilla Chip, Strawberry and Peanut Butter. One standout from the collection of cupcakes is the Superfood variety, which is assembled with a chia, spirulina and acai cake that's coated in beet icing and topped off with streusel prepared with sesame, sunflower seeds and cinnamon.
