Using biotechnology, the company transforms nutrients into milk proteins—a process that relies on fermentation. Legendairy Foods starts by combining microorganisms and sugar, which are then fermented to become milk protein. Using the resulting milk protein, the company is able to create more sustainable and efficient dairy products that are completely hormone and antibiotic-free. As the company does not need cows to produce its products, it greatly reduces its greenhouse gas emissions and water waste, and also avoids separating mother cows from their young.
