This Clean-Label Starch Works Just As Well As Modified Variants

Loryma, a Germany-based producer of wheat starches and proteins, has created an innovative new adhesion starch that is free of E numbers, which indicate chemical modification.

The 'Lory Starch Saphir pure' is a starch that offers adhesion through the creation of permeable film that allows steam to flee the coating, making for a reliably crisp breading that works wonderfully well with meat dishes, fish and plant-based products without causing the coating to crumble. This wheat starch also helps to curb fat absorption in deep fat fryers.

Dr. Markus Wydra, head of research and development of starches and proteins over at the Crespel & Deiters Group, which owns the Loryma brand, noted that the advent of this starch solves an issue for food manufacturers who have been forced to eschew adhesion starches in order to be able to declare their products free of E numbers. "With the introduction of Lory Starch Saphir pure, however, we have developed a highly functional wheat-based solution that contributes significantly to a perfectly crisp breading," he stated.
