Architecture firm Bindloss Dawes has taken on a project to renovate a new space for Osip, a Michelin-starred farm-to-table restaurant. Osip is led by Chef Merlin Labron-Johnson and the renovation process transformed the 18th-century pub located in Somerset, England into a restaurant.
The team peeled back the building comprised of three storeys back to the original silhouette by taking out the recent additions and stabilizing the stone walls. The co-founder of the studio, Olive Bindloss speaks to Dezeen about the design changes, sharing "The original Osip had a road-facing window and a small serving hatch, giving diners a limited view of the kitchen. In the new restaurant, we have opened up new windows and the garden to create wide views of the surrounding landscape."
