Drinks entrepreneur William Borrell of London's Ladies & Gentlemen bar created 'Willow,' an all-new low-alcohol spirit that comes in at just 4.4% ABV. According to Borrell, “There’s obviously a boom in no/low alcohol spirits... Willow’s designed for those wanting all the cues of alcohol with a depth of taste.”
Willow is a refreshing choice that is said to be somewhere between a gin and tonic, an Aperol Spritz and a Negroni. The low-alcohol spirit certainly delivers in terms of taste by building on the flavors of an apple spirit with pineapple, kaffir lime, cracked black pepper, agave and cherry tomatoes. The finished spirit is clear and viscous, lending itself well to being served neat over ice or with a tonic.
