A bellini cocktail is traditionally made using champagne and peach juice, however Christo takes her version a step further by using real peaches and fresh basil. The drink begins with peach puree which can easily be made by blending up fresh peaches. Then to the puree smash a basil leaf, to release the herbs oils into the peach puree. Then add chilled prosecco and garnish with peach slices and more fresh basil.
