Made from a gluten-free flour blend, these muffins are vegetable-infused and riddled with chocolate chips. The whole grain blend gives these muffins a rich texture, while the cocoa powder is responsible for the gorgeous color. Though this recipe lists a whole-grain flour blend, the type of flour blend used is completely up to the consumer. However, it is recommended that whatever blend used should be about 70% grains and 30% starches.
