There are now plenty of plant-based egg replacers on the market, as well as tofu-based recipes for vegan scrambled eggs, but Hampton Creek's newest product delivers a more sustainable alternative to eggs with 'Just Scramble.'
Just Scramble is made from the mung bean legume, which scrambles in a way that looks remarkably egg-like. As well as being completely egg-free, the product also does away with antibiotics and cholesterol, and requires less water and emit fewer carbon emissions than conventional eggs to produce. Just Scramble is packaged by the bottle and has the potential to be used for a wide range of applications that go well above and beyond just breakfast.
Hampton Creek's Just Scramble is first set to be available in San Francisco, California, followed by other locations in 2018.
