To create its eggless mayonnaise spread, The Not Company uses artificial intelligence to understand food on a structural level, but recreate favorites in a way that's both healthy and sustainable rather than damaging to humans and the planet.
As The Not Company puts it, "We want to change the way we make the food we love, rather than changing the food we love." Following the release of Not Mayo, the company's first commercial product, The Not Company has plans to launch a range of other alternative products like Not Yoghurt, Not Milk and Not Cheese.
