The NOMA Tulum pop-up was a highly anticipated and creative venture for the restaurant and its chef René Redzepi that included a NOMA Mexico scholarship opportunity that will see at least two young chefs travel back to Copenhagen to train.
Running April 12 to May 28, 2017, the NOMA Tulum residency actually started taking reservations in December 2016, with bookings available for two, four or six, at $600 a seat. The experience sees the creative NOMA team play with local ingredients like octopus, jackfruit, mangos and giant melon clam.
The NOMA Tulum pop-up comes about a year after chef René Redzepi announced that the restaurant would leave its original canal-side spot for a location just outside of Christiania (Copenhagen's infamous 'Freetown,' an autonomous community on former army barracks), where he planned to create an urban farm to support the restaurant's menu.
