Milky Way Shakes' Drinks Can be Topped with Aquafaba-Based Meringues

Following its successful crowdfunding campaign on Kickstarter, Milky Way Shakes is launching as an all-vegan milkshake food truck in Austin, Texas.
At the truck, consumers will be able to order six different kinds of non-dairy milkshakes, including options like the Star-Berry Lemon Cloud, Red Planet or the Oreo Borealis.
Customers also have the chance to enhance their order with a variety of unique add-ins, such as a strawberry compote, spicy fudge or chocolate chips. One of the other interesting options is a vegan meringue, made with a base of aquafaba (an egg replacer that comes from the brine of beans). Aquafaba is a unique ingredient that can now also be found in eggless mayonnaise alternatives, as well as creamy non-dairy drinks where a bit of a frothy texture is desired.
