This ice tea recipe from Food52 is a variation of beverages served at Queen of Sheba Ethiopian Restaurant and Portland's Stumptown Coffee. Created by hardlikearmour, the Tea Thyme Soda is more or less black tea with thyme and is described as "surprisingly delicious and refreshing." If you want to make a cocktail version, simply add bourbon.
The ice tea recipe has two parts. You will first need to make a Tea Thyme syrup, which consists of water, sugar, black tea bags (such as darjeeling), thyme and cinnamon. Once that is complete, you can add it to the soda. The soda portion is just lemon juice and seltzer on ice. In addition to bourbon, you can also add a fresh thyme sprig or lemon wedge for garnish.
