Although the coffee cup cake has been reinvented time and time again, this recipe from Heather Baird proposes an alternative way to make an open pastry sponge cake. Flan is a traditional Latin dessert that can be tricky to make because it's so easy for the heated caramel to burn when it's not carefully watched. However, since this recipe is only for a single serving rather than a batch that will serve many, this is the perfect way to ease into experimentation. As well as being made in a coffee cup, this flan recipe also includes an espresso powder for a shot of flavor.
The recipe does take patience to prepare, but this is a perfectly portioned dessert that provides just the right amount of indulgence.
