This Garden Salad is Made Meatless With the Addition of Coconut Bacon

Cobb salad is cult classic recipe loved by many, however the recipe is often contains meat in the form of chicken and bacon making it a salad option many vegetarians pass on. Thankfully, food blog A Couple Cooks has created this meatless version of the popular dish complete with coconut bacon and chickpea substitutes.

Keeping the dish relatively simple, A Couple Cooks shares a cobb salad recipe that is very similar to the original with a few items changed around. The tomato, avocado and boiled eggs remain the same and are all finely chopped and layered overtop of a bed of salad. To substitute the meat components, the recipe calls for coconut bacon -- coconut flakes flavored with spices to mimic the taste of traditional bacon -- and cooked chickpeas in place of shredded chicken. This is a great alternative for those subbing out meat from their diet but looking to retain flavor and protein.
