Cobb salad is cult classic recipe loved by many, however the recipe is often contains meat in the form of chicken and bacon making it a salad option many vegetarians pass on. Keeping the dish relatively simple, A Couple Cooks shares a cobb salad recipe that is very similar to the original with a few items changed around. The tomato, avocado and boiled eggs remain the same and are all finely chopped and layered overtop of a bed of salad. To substitute the meat components, the recipe calls for coconut bacon -- coconut flakes flavored with spices to mimic the taste of traditional bacon -- and cooked chickpeas in place of shredded chicken.
