Celebrity culinary expert Chef Clodagh McKenna recently teamed up with legendary beer brand Guinness for a series of exclusive recipes that are both unexpected and innovative. The celebrity Irish chef, restaurateur, author and lifestyle expert aims to spotlight the versatility of the classic Irish stout when it comes to gourmet cooking.
The chef's unique recipes include a Guinness & Honey Glazed Pork Loin with Mashed Parsnips and Hazelnuts, a Guinness Treacle Bread with Smoked Salmon and Guinness Aioli and a Chocolate Guinness Cake with Orange Blossom Frosting.
"I always like to keep things fresh and interesting. Creating recipes like these ones with Guinness keeps me on my toes and allows me to challenge my creativity in a fun way – and it helps that it’s an ingredient I really love! Every time I think about cooking and hosting, I’m thinking about how I can outdo myself and help others entertain with classic ingredients that make you feel at home, like Guinness does," said Chef Clodagh when describing the role innovation plays within her day-to-day work.
Speaking more about her collaboration with the beer brand in particular, the chef explains "these recipes are close to my heart because I grew up around one of the key ingredients: Guinness. In fact, my grandad owned a Guinness pub and I have fond memories trying it for the first time there. So when the opportunity arose to work with Guinness to create something new and exciting from a drink I know so well, there was no question. These new recipes are perfect for spring – light, fresh and sweet. The intention was to use ingredients that are a classic representation of Ireland with my own special twist - just in time for St. Patrick’s Day!"
Furthermore, Chef Clodagh McKenna speaks about her creative rituals, describing how she resets creativity while hard at work. "It’s always important to take time to remember why you’re doing the work you do. I think of how passionate I am about food and hosting others, whether it’s with a quick drink or a full course supper like the one I created for Guinness. It helps me to approach each new challenge with a clear head and a drive to be as creative as I can."
