As climate change and animal cruelty becomes a more mainstream issue, many consumers are in search for more eco-friendly products, specifically vegan egg-alternatives. JUST Egg, a California-based food technology startup, recently launched its vegan mung bean-based "scrambled egg" products.
The company announced it has already accounted for over 40% of sales from the natural "liquid egg products" --- which includes chicken eggs. The vegan egg-alternative can be used to create omelettes, waffles, french toast, and even dinner dishes such as Pad Thai and Shakshuka. By consuming JUST Egg over animal-based food products, consumers have saved just under 300 million gallons of water and lowered CO2 emissions drastically.
JUST Egg is available nationwide in America at Sprouts and Whole Foods, and the company plans to begin distribution to Europe shortly.
