Danish startup FUMI has created yeast-based vegan egg whites made from beer waste. This sustainable and cruelty-free way of producing foods was created by entrepreneurs Corjan van de Berg and Edgar Suarez Garcia.
The vegan egg white alternative is made from three key ingredients, including foaming proteins that can be used to make meringues, gelling and binding proteins that form heat-set gels similar to egg-white proteins, and emulsifiers made from water and sunflower oil to create a stable emulsion. The process is both affordable and eco-friendly and releases 95% less carbon dioxide emissions compared to traditional chicken egg whites.
