This meatless version of pulled pork sandwiches is creatively made by subbing in lentils as the main source of protein. The dish retains the same flavors and a similar texture to the traditional pulled pork version, only that it is altered to suit vegan and vegetarian diets.
The dish features green lentils that are marinated in coconut sugar, paprika, garlic and a vegan barbecue sauce. The lentils take on the color of the paprika and barbecue sauce, turning an orange shade that is similar to the look of shredded pork. The dish is then topped with all the staple fixings of cabbage and shredded carrots marinated in a light olive oil dressing and piled high on a bun.
