Stef, the cupcake queen from the off-the-wall food blog 'Cupcake Project,' is at it again with these eyebrow-raising potato and egg cupcakes. Crafted in honor of Mother's Day, these savory sweet treats offer a clever riff on hash browns and devilled eggs.
The base of these darling cakes is a cluster of parmesan hash browns baked into a cupcake shape. The golden cakes are then topped with a swirl of devilled egg Ffosting, which swaps mayo for heavy cream and confectioner's sugar to create a distinctly sweet take on the classic. Not wanting to stray too far from tradition, Stef topped these beauties off with the classic sprinkle of paprika that usually accompanies devilled eggs. The result is a sweet, savory and slightly smokey (thanks to the paprika) symphony.
An intriguing and eclectic mix of flavors and textures, these potato and egg cupcakes are a tasty way to show mom you care.
