NotMilk from NotCo, a food-tech company in Latin America, is making its debut in the United States and it promises to introduce the next generation of plant-based milk that stands out for its likeness to dairy-based milk in taste and texture. Leveraging proprietary artificial intelligence and machine-learning algorithms, NotCo creates entirely plant-based foods that mimic the properties of their dairy-based counterparts.
