Ki One Red Pepper Cask Captures the Heat of Hong-Gochu Red Chilli Peppers

— December 22, 2025 — Lifestyle
South Korea's Ki One Whisky Distillery collaborated with whisky writer and chef Edward Lee to make the limited-edition Ki One Red Pepper Cask, a single malt aged for three years in red chili pepper-infused casks. This whisky brims with the heat of hong-gochu red chilli peppers, and is said to lend itself well to pairing with rich, savory dishes or using as a base for cocktails. “Korean cuisine is becoming increasingly popular in America, and pairing it with this whisky makes perfect sense," said Lee. "When you pair spicy foods with traditional whisky, the spice can overpower the whisky, making it hard to truly enjoy. However, with a spicy whisky, you can appreciate both the drink and Korean dishes, many of which are spicy.”

The Ki One Red Pepper Cask x Chef Edward Lee Edition is limited to 1,500 bottles.
