As the portmanteau suggests, Frushi is fruit-based sushi. It consists of fresh fruit either rolled with rice or topping rice in the same way that fresh fish is used in traditional sushi. Frushi as a brand began as a food cart in Copenhagen, and the founders are looking to spread beyond the streets with a new Kickstarter campaign.
