There are a variety of types of doughmakase from California rolls to wasabi pea-packed rolls. These bread-sushi hybrids are made by baking bread that has been pressed flat, making it easy to roll. Then, the bread is packed with flavorful ingredients and rolled to a close.
These completed bread rolls are then topped with the same cured raw fish that sushi is made with, and are eaten in bite-size portions. Some of the bread sushi at Small's are not topped with fish and are made more like a fully packed handroll, but even in these cases, the products taste true to their sushi-inspired roots.
