Masala-Infused Chickpea Pies

These Vegan Pies Feature a Creamy Coconut Base & Indian Spices

U.K.-based food brand Higgidy recently went ahead and launched a truly delectable vegan pie that is packed with protein whilst also offering the flavor profiles of Indian food, long one of the most popular cuisines in the British market.

The 'Roasted Chickpea Masala Pie' is comprised of layer after layer of indulgent chickpea curry that is totally devoid of meat and dairy products. This particular vegan pie comprises a vegan short-crust pastry that makes use of a coconut curry base thickened with spinach and lentils, with an added dose of flavor delivered by the tomato masala. A sweetened mango chutney helps to balance out the taste, while roasted chickpea crumb adds an intriguing texture.

Available at Sainsbury's, Waitrose and Ocado, this vegan pie is a fine example of how international cuisines can be presented in vegan form to spectacular effect.
