EatKinda Makes a Creamy Frozen Dessert with a Veggie Base

Cauliflower has proven itself to be a suitable, low-carb alternative for everything from rice to pizza crust and EatKinda even created cauliflower-based ice cream.

Jenni Matheson, the co-founder of EatKinda, says she developed the recipe for cauliflower ice cream as a result of searching for ways to use up vegetables from her garden. After initially trying pumpkin, and other vegetables I had grown, it quickly became clear that cauliflower was the perfect base. It has a beautiful texture without an overpowering taste, meaning you can create flavors easily," said Matheson.

Strawberry Swirl, Double Chocolate and Mint Choc Bikkie are some of the cauliflower-based ice cream flavors that reinterpret classic flavors with a creamy and nutritious vegetable base.
