At Anuga 2023, Acetaia Leonardi shared its Yuzu Pearls, created by turning yuzu juice into spheres. These pearls are ready to elevate everything from salads and seafood recipes to sushi and oysters, as well as a variety of desserts. Although delicate, the pearls can be used on warm dishes because of their temperature resistance.

These caviar-like pearls transform the eating experience with flavor, texture and a contrast of color, making everyday and special eating occasions all the more interesting. The unique and vibrant flavor of yuzu is on the rise, and outside of the usual ways that they might encounter the essence of this Japanese fruit, consumers now have a novel way to appreciate its refreshing citrusy notes and hint of floral aroma.
