Orijin Bakery, the newest concept from The Pulpo Group, is a modern Ann Arbor bakery serving handcrafted desserts, breads, sandwiches, and more, including a Pistachio Cardamom Bun, homemade Pop-Tarts, and a seasonal Pala Romana. The shop is led by co-owner and Executive Pastry Chef Jin Gorian and co-owner Sava Farah, and the menu blends sweet pastries with savory breads.
Gorian brought a large laminated-dough croissant program from her work at The Boro and added a gluten-free banana muffin turned vegan, a honey cinnamon scone and signature cake slices. She installed a special deck oven to expand bread production and now offers sourdough Roman-style pala romana with rotating seasonal toppings, focaccia sandwiches, baguettes, whole-wheat sourdough boules, and ham auberge sandwiches.
The bakery aims to deliver a transportive, European-inspired pastry experience rooted in classical technique and seasonality. It plans gradual menu expansion into custom preorder cakes, prioritizing craft and quality over scale as its operating philosophy.
