'Sammy's Breakfast Bar' is Inspired by Dr. Seuss Books

Dr. Seuss' universe is a fantastical one, with many aspects that would be difficult nigh on impossible to replicate in the real world, but Sammy's Breakfast Bar will do its best. The restaurant, soon to open in Fort Collins, Colorado, will be a Dr. Seuss-themed breakfast joint offering both an aesthetic and a menu based on the motifs of the children's author.

Sammy's Breakfast Bar will be able to seat 90 diners, with the hopes that the restaurant will regularly be as bustling with energy as Dr. Seuss' stories. One of the staple items on the menu will be green eggs and ham, based on the story of the same name. The dish won't be as nauseous as it sounds: "a little bit of green food dye will do the trick," said Chris Smith, a managing partner of Sammy's Breakfast Bar.
