While pancakes are fine just the way they are, sometimes you have to eat a stack of two, three maybe four in order to get your fill. That's where the puffy pancake comes in. The puffy pancake is essentially a giant pancake on steroids made in a rice cooker. Cooking the pancakes in a rice cooker increases the batter's fluffiness to a monumental size rendering it to the shape of a thick cake. While these puffy pancakes taste great in the original flavor batter, you can change it up by adding cocoa powder, chocolate chips, bananas or even savory ingredients. Because these puffy pancakes are so enormous, you'll only need to make one for breakfast.
