King is a New York City-based restaurant, situated on King Street, that offers a menu that changes daily—one of its recently offered plates was a pink salad that people ordered for more than just the health benefits of salad or the slightly sweet and bitter taste of chicory.
The salad of pink radicchio leaves was paired with ricotta, marjoram and walnuts, making for a harmonious, aesthetically pleasing Millennial pink composition on the plate.
A number of Millennial pink food and beverages have emerged across different categories, including everything from alcohol to chocolate. Many growers attribute the demand and popularity of pink radicchio to its photogenic properties above all else. As this particular color of radicchio only emerges in the late winter and early spring seasons, dishes made with the pink lettuce are also alluring for their exclusivity.
