Kane's Handcrafted is a Boston bakery that recently launched an over-the-top brioche-based lobster donut that will give the cronut and other donut hybrids a run for their money. The intense "do-wich" (donut sandwich) is stuffed with all the trimmings of a regular lobster roll, however, the bun is a bit more indulgent.
While the donut sandwich hybrid is nothing new, with mainstream examples like Dunkin Donuts' glazed breakfast sandwich dating back to 2013, this iteration definitely ups the ante by infusing it with seafood. The lobster donut can also be seen as a convergence of several movements within the food world based on its combination of sweet and savory elements.
Although it seems like an extreme example, Kane's Handcrafted's new treat is a natural extension of the sweet and savory obsession as well as the predisposition toward zany donut adaptations.
