This ice cream sandwich recipe is not only easy to make, it is also extremely tasty. From Food52's Yossy Arefi and featured on Refinery29, the Chocolate and Olive Oil Ice Cream Sandwiches also combine two slightly unusual flavors.
The recipe is undertaken in two parts: first the gelato, and then the cookies. The gelato features olive oil and cacao nibs, where as the cookies require ingredients such as bittersweet chocolate, dark rye flour, muscovado or dark brown sugar, vanilla extract and flaky salt to sprinkle on top.
