This chickpea bruschetta recipe is playfully described as a "cook's treat" – an appetizer that the cook can enjoy while making dinner.

The recipe, which was created by Laura Vitale, provides an elevated update to traditional Italian bruschetta recipes. It involves lightly mashing chickpeas and then combining them with sundried tomatoes (with their oil), lemon zest and lemon juice, parsley, olive oil, and salt and pepper. Then the cook simply toasts sliced ciabatta bread on both sides, rubs it with garlic, adds the chickpea mixture and then drizzles the chickpea bruschetta with olive oil.

For a final garnish, cook's have the optional choice of shaving some parmigiano-reggiano or ricotta salata on top of this recipe.
