These crispy zucchini tacos are a fun twist on a vegetarian meal. Created by Jess at How Sweet It Is, the recipe also comes with a cherry pepper crema.
The zuccini is cut into strips and breaded, giving it a nice texture. The cherry pepper crema pairs well with this, as it consists of plain greek yogurt, half and half, lime and diced cherry peppers. Of course, you can top the zucchini tacos with whatever extras you wish. Jess went with cherry tomatoes, shredded red cabbage, sliced radish, sliced scallions, fresh cilantro, crumbled queso fresco cheese and lime wedges. All of this is piled onto small corn tortillas. Or, if you prefer, you can go with flour tortillas instead.
