Teff makes a great gluten-free whole-grain breakfast alternative to wheat, specifically because it boasts a nutty flavor and a higher protein content.

To prepare a Teff whole-grain breakfast, one only needs to heat it with milk or water. As well as making a great replacement for oatmeal in the morning, whole Teff can be toasted and used to add a crunchy texture to muffins, salads and other dishes. The versatile ancient grain can also be ground into a fine flour and baked into bread for added health benefits.
