Inspired by Damien D'Silva's tapioca cake, Tsai has updated the recipe to provide a more flavorful flair. Though both cakes offer great texture, the original cake was basic in spices and not nearly as exciting as this remake. To deliver a more exotic aspect to his cake, Tsai added coconut and lime to the ingredients list. To further the fruity aspect, Ming Tsai's Coconut Tapioca Cake is served with a side of chopped papaya, which adds a very unique flavor.
