To make Mango Sago, the first step is to peel and chop four ripe mangoes and remove the pits. Also, if a filling such as tapicoa is desired, you need to cook 4 cups of water with a quarter cup of small tapioca pearls until they are transparent and chewy. Then, you need to drain the pearls and rinse them in cold water in order to get the right texture. Lastly, you can either use the cooked tapioca pearls as they are or add them to the mango mixture for extra texture and flavoring.
