Briette's line of soft-ripened cheese products recently expanded with the addition of a Dulce de Leche variety that shares savory cream notes with a hint of caramel.

The cheese with a white, edible exterior and yellow-white, soft interior is aged from the outside in and its natural maturation process makes the cheese lactose-free. During the cheese-making process, cultures are added to form the cheese's balance of bloomy yet creamy qualities. Additionally, the cheese is naturally gluten-free and made with microbial rennet, which makes them suitable for vegetarians too.

This cheese, and others in the line of creamy fine cheeses, are made with pasteurized and rBST-free milk from cows in the alpine region of Bavaria, Germany. This sweet soft-ripened cheese rounds out the rest of Briette's range, which includes options that are buttery or smoky.
