Trader Joe's new Caramel Washed Gouda Cheese starts with milk that comes from cows in the Twente region of The Netherlands, which have never been treated with rBST. These cows instead munch on clover, which results in delicious milk that makes exceptional cheese. After the milk has been turned into cheese, the curbs are then hand-washed in caramel and left to mature over the course of five months. This unique process results in a rind that develops a rich chestnut-brown color, while the inside of the cheese takes on some of the caramel to produce a mildly sweet flavor.
