Joy the Baker's 'Simple Roasted Apricots With Honey Mascarpone' recipe merges what are often considered to be antithetical flavors. Joy began this dish with the apricots by basting them in granulated sugar. A quick roasting allowed the sweet ingredients to come together while also crisping the top of the fleshy treats, making for an interesting hard yet soft texture. Dollops of sugary honey mascarpone cheese and shreds of mint topped off the orange concoctions, producing a rather aesthetically pleasing appetizer.
