At Pauline, the signature restaurant named after culinary muse Pauline Baker, Bissell presents a seafood-forward menu featuring standout dishes like "yuzu-marinated scallops, caviar tostadas, and Cedar Key oysters." Additionally, hidden within the hotel, Little Torch is an exclusive, guest-only cocktail lounge inspired by Latin rhythms, offering rare spirits and tableside service. Signature drinks include the "Modern Vices, a clarified piña colada with Champagne and daiquiri foam, and the Young Lassi, a complex mix of brandy, kefir, and bee pollen."
