Vosges Haut-Chocolat is Introducing Ruby Chocolate to the United States

Since the discovery of ruby chocolate, commercial products are slowly being introduced around the world—and Chicago-based chocolatier Vosges Haut-Chocolat is bringing the fourth type of chocolate to the United States in the form of naturally pink truffles.
The Ruby Truffle Collection introduces two limited-edition ruby truffles that deliver the bold hue of ruby cocoa beans: 'Ruby Cerise,' comprised of vanilla, cherry gelée, freeze-dried cherry and pink peppercorn, and 'Sour Mango Ruby,’ made with mango, passion fruit, salted caramel, all topped off with edible purple flower petals.
As well as offering a totally different look than milk, white and dark chocolate, ruby chocolate is said to have a distinct flavor of its own that is sweet yet sour, which is played up by the pink truffles.
