For foodies looking for a vegetarian substitute to popular meat-filled dishes, these homemade lentil meatballs by food blogger Emma Bates of Kuidaore are an ideal meatless substitute still packed with protein and flavor.
The meatballs are made using a medley of wholesome ingredients to replicate the robust flavor of meats such as beef. The base of the vegetarian meatballs are made from a mix of lentils and quinoa that are cooked and mixed with an egg, chilli, coriander, garlic and seasoning. Together the mixture is rolled into tiny balls and can be baked in the oven. The lentils and quinoa provide protein while replicating a similar texture and taste to the traditional meat version.
These meatballs can be enjoyed on their own as-is or tossed into sauces and served alongside pasta.
