Typically hummus is a chick pea based spread, but increasingly people (mostly food bloggers) are adding unusual ingredients to their homemade hummus recipes. The latest is a chipotle and sweet corn hummus from the blog Love and Lemons, to be served with tostadas.
The sweet corn dip has a distinctly smoky taste. To recreate this homemade hummus, you will need fresh corn, cooked chick peas, garlic, lime juice, tahini, olive oil, chipotle paste or powder, smoked paprika, sea salt and ground pepper. The tostadas are tortilla based and topped with not just the hummus, but diced avocado, jalapeno slices, baby kale or arugula, scallions and tomatillo salsa.
The Mexican-inspired dish makes a healthy snack any time of the year.
