Holmes Cay Rum is revealing two of the world’s rarest single cask rums ahead of the holidays, sharing the new ‘Fiji 2001 21 Year’ rum and the 'Barbados 2002 Pot Still.' This all-molasses, 100% pot still rum is exclusively produced at the only rum distillery in Fiji, South Pacific Distilleries, and was aged for 2 years in an ex-bourbon cask and then an additional 19 in another one based in the UK. The expression was bottled in New York at full barrel proof.
The ‘Barbados 2002 Pot Still’ is a single cask, pure pot still mark that was distilled in Barbados and aged in an American oak ex-bourbon cask. The liquid was then transferred to the UK here it aged for 20 years and was bottled at full barrel proof.
The ‘Fiji 2001 21 Year’ rum contains flavors of brown sugar, vanilla custard, and finishes with tobacco and oak. The ‘Barbados 2002’ offers aromas of dried apricot, yeasty dough, citrus, honey, and baking spice, along with a finish of mineral and oak.
