If you enjoy the crunch of deep fried desserts, but you don't want all the grease going to your hips, this recipe for a Cornflakes ice cream pie is a good alternative for you.
It differs from your usual pie in three very significant ways. It's made using tortilla shells that are placed in baking tins, coated with butter and cinnamon sugar and baked for 13 minutes. The filling is not fruit, but cold refreshing vanilla ice cream. Luckily, you don't have to worry about weaving an intricate pattern of dough to top off your Cornflakes ice cream pie. All you need to do is crush up some cereal and mix it with brown sugar and then drizzle honey over all of it.
The result is a delicious cold treat that is very easy to make.
