Avocados take centre stage in these spicy vegetarian avocado tacos put together by healthy food blog Love and Lemons. These meatless tacos fill up on healthy veggies, cheese and homemade green salsa to replicate the popular South American flavors without the need for meat.
These tacos are filled with roasted veggies that take the place of a meat filling but still provide a healthy and hearty substitute made from eggplant, tomatoes, squash and peppers. Added into the mix are black beans for an added source of protein as well as sliced avocado and cotija cheese.
The tacos are also topped with a homemade avocado salsa made from tomatillo salsa, pepitas, spinach, olive oil, spices, lime and sliced avocado. The addition of the avocado to this salsa gives it a thicker and creamier texture than most.
