United Finalizes a Cabernet Blend Mid-Flight with Aperture Cellars

United Airlines is preparing 'Air and Vine' with Aperture Cellars, a custom Cabernet Sauvignon whose final blend was set during a flight so Polaris passengers can enjoy a red built for cabin conditions rather than for ground tasting. Winemaker Jesse Katz finalized the blend onboard a Newark-to-San Francisco trip, treating the aircraft itself as part of the cellar.

The 2024 vintage came from hillside fruit in Geyserville and spent 24 months in French oak before takeoff, giving Katz a mature base to rebalance in the air. Cabernet Sauvignon brings structure, while Malbec adds color and a plusher middle, so the wine can still taste rich even as taste and smell soften aloft.

For travelers, this means a business-class glass shaped for the seat where it will be poured, not a bottle chosen solely from ground tastings. It also nudges premium cabin wine toward a more curated, experience-first role on the trip.
