Watermelon is an obvious choice for summertime refreshment. It's packed with antioxidants, most notably vitamins A and C. Not to mention it's absolutely delicious! The lemon and mint in this recipe provide a tart, rejuvenating flavor that breaks up the sweetness of the watermelon.
To make, begin by blending watermelon and water to achieve a smooth texture. Strain the watermelon pulp and discard, keeping only the liquid. Add lemon juice, agave syrup and mint and blend once again. Transfer the liquid into an ice-filled pitcher and serve the thirst-quenching, piquant beverage to your guests.
