John Peterson and his wife Erica are behind the farm-to-turkey-store and describe that they worked with a local smokehouse in Ellendale, Minnesota to make the uncured turkey sticks, which need to be refrigerated. As Peterson describes, because the product is preserved with naturally occurring nitrates, "We can’t call the strips ‘jerky’ because they have a higher moisture content and are not shelf-stable."
